Bread is commonly consumed on a daily basis by most of the population and is one of the body’s main sources of energy, as it has a high nutritional value and contains a good amount of carbohydrates. Remember that carbohydrates are based on glucose, and are therefore the main “fuel” of our body! For this reason, it is recommended to have them in our diet daily. If we consider that 50-55% of the energy that our diet provides us with in a 24-hour period is best derived from carbohydrates, we realise that bread is not without reason at the base of the Mediterranean Diet! Of course, these carbohydrates can come from other sources besides bread, such as rice, pasta, potatoes or even from non-starchy foods such as fruits and vegetables.

But let’s take a closer look at the nutritional value of bread… It is a very nutritious food as it is rich in fibre, which helps both to increase satiety and the smooth functioning of the digestive system. It is also an important source of carbohydrates, contains protein and B vitamins such as thiamine and niacin. It is also common for flour used in bread production to be enriched with calcium, iron and vitamins, which makes bread an important source of calcium, iron, vitamins and minerals.
